I want anything in universe 1 to appear as simple numbers (i.e. "20" not "1/20") but I DO want fixtures in other universes to be labeled with their universe number and then local address (i.e. "2/20" not "532")
Is there a way to specify my preferred address format for each universe?

The only way I've found to do this is put Universe 1 in System A, everything else in System B. You can then force System B to use 2/1 mode.
The thing to watch out for is some paperwork (Channel Hookup, Dimmer Hookup) will print separate reports for Systems A and B. There is a menu somewhere which can change that behavior, but off the top of my head I'm not sure where it is.

Set you dmx# to u address/u dimmer.
It a pain I know I have the same issue. In need to fix all of my legends from "dimmer" to u address
